Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the body of the soup when mashed, giving it a thick, smooth texture.
Milk
Adds moisture and creaminess, thinning the mashed potato into a soup.
Butter
Adds richness and fat, and is cooked with the flour to form a thickening roux.
Flour
Thickens the soup as it cooks with the melted butter and boils in the liquid.

The step that matters

Stir the flour mixture into the boiling soup. Flour clumps if added raw or to a cool liquid. Blending it first with melted butter and stirring it into boiling soup helps it disperse smoothly and thicken evenly.
