Directions

Prepare the clams

  1. Strain the liquor from the clams.

  2. Bring the liquor to a boil.

  3. Wash the clams to remove shells and grit.

  4. Scald the clams in their own liquor for 3 minutes.

  5. Chop the clams finely.

  6. Press the clams through a colander or coarse sieve.

  7. Add the soft parts to the soup.

Make the soup

  1. Blend the flour and butter over low heat until smooth but not browned.

  2. Gradually stir in the boiling liquor until perfectly smooth.

  3. Keep the mixture hot.

  4. Add enough milk or cream to make at least 1 quart of soup.

  5. Thin the soup with milk to taste if it is too thick.

  6. Season with mace and pepper, being cautious with salt.

  7. Boil for 5 minutes, stirring frequently.

  8. Serve with croutons.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavour and body of the bisque once pressed into the soup.
Butter
Enriches the base and carries flavour, adding richness to the soup.
Flour
Forms a roux with the butter that thickens the soup to a smooth body.
Milk
Adds moisture and creaminess, loosening the thickened base to the desired consistency.

The step that matters

Blend the flour and butter over low heat until smooth but not browned. Cooking the roux gently keeps it from browning and tasting toasted, and stirring in the hot liquor smoothly prevents lumps. Starch thickens the soup only when the flour is well blended with the fat first.

Swap the mace

How well each one fits the dish's main ingredients (clam, butter, flour, milk, pepper):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against clam, butter, flour, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
