Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the thick batter body that holds the clams together while frying.
Eggs
Bind the batter, and the beaten whites add air that lightens the fritters.
Salad oil
Adds fat to the batter, giving a more tender interior.
Clams
Provide the main flavor and texture of the fritters.

The step that matters

Folding in the beaten egg whites. Fold gently so the air stays in the batter. Trapped air expands in the hot lard and makes the fritters light, while overmixing deflates them and leaves them dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, egg, pepper, clam):

  1. Parsleyfits better
  2. Jalapenofits about as well
  3. Nutmegthe original
  4. Turmericfits about as well

Fit is the average pairing score against flour, egg, pepper, clam. Candidates are from the same food group and used in at least 100 recipes.
