Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Upper round steak
Finely chopped beef forms the body of the patties and gives them their meaty texture.
Butter
Browns the outside of the patties and, mixed with flour, forms the base of the sauce.
Flour
Mixed with butter and liquid, it thickens the pan juices into a smooth sauce.
Onion juice or grated onion
Adds savory flavor and aroma to the beef mixture.

The step that matters

Browning the patties in very hot butter. Patties placed in a fully heated pan sear quickly, forming a browned crust through the Maillard reaction. A cool pan lets them steam and turn grey, with less flavor.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, flour):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
