What each ingredient does

Smoked tongue
Is the main ingredient, whose cured and smoked flavour defines the dish.

The step that matters

Boiling gently for about 4 hours. Boiling hard can toughen the meat and break it up, while gentle simmering over a long time softens the connective tissue so the meat becomes tender and the small bones loosen enough to pull out.
