Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh young hen-turkey
Provides the main meat, which the roasting cooks through to be served.
Fresh truffles
Supplies the dominant earthy aroma that flavours the whole bird.
Lean ham
Adds savoury, salty flavour to the filling.
Nutmeg
Adds a warm, aromatic spice note that complements the truffles.

The step that matters

Let the filling cool completely before stuffing. A warm filling placed inside a raw bird can keep the bird at temperatures where bacteria multiply, so the mixture should be fully cool before it goes in.

Swap the white pepper
