Roast Goose

Ingredients

Directions

  1. Ensure the goose is tender by checking the breast bone and wings.

  2. Draw, singe, and wipe out the goose without washing it.

  3. If necessary, rinse the goose with 1 quart of cold water mixed with 1 teaspoon of baking soda.

  4. Boil the apples, onions, and herbs in enough water to cover them until soft.

  5. Rub the mixture through a sieve and add enough mashed potato to form a firm dressing.

  6. Season the dressing with pepper and salt, then stuff the goose.

  7. Sew up the goose and truss it securely.

  8. Place the goose in a roasting pan with a large lump of butter and 3 tablespoons of boiling water.
