What each ingredient does

White onions
Form the main body of the dish; they soften and turn sweet as they cook in water.
Butter
Adds richness and a silky mouthfeel when melted over the cooked onions.

The step that matters

Boil until tender enough to pierce with a straw. Onions are done when the centre yields easily, not at a fixed time, because size and freshness vary. Underboiled onions stay firm and sharp, while overboiled ones turn mushy and lose shape.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
