Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Onions Baked and Browned

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut a slice from the top and bottom of each onion and peel them in a bowl of water.

Boil

  1. Bring a pot of salted water to a boil and add the milk to whiten the water.

  2. Add the onions and boil until tender, about 40 to 60 minutes.

Bake

  1. Drain the onions and place them in a baking pan.

  2. Sprinkle with salt, pepper, and sugar, then add a little of the boiling liquid.

  3. Bake in a 400°F (200°C) oven until the onions are nicely browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften during boiling and brown in the oven, becoming sweet and tender as their starches and sugars develop.
Milk
Whitens the boiling water, helping keep the onions pale during cooking.
Sugar
Adds sweetness and promotes browning on the onion surfaces in the oven.

The step that matters

Bake until nicely browned. Onions are already cooked tender by boiling, so the oven step is for browning. Watch closely, because sugars caramelise and can scorch once the surface darkens.

Swap the onion

How well each one fits the dish's main ingredients (pepper, sugar, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against pepper, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
