Stewed Salsify with Cream Sauce

Ingredients

Directions

  1. Boil the salsify until tender, then cut it into 2-inch lengths.

  2. Prepare a rich Cream Sauce (see separate recipe).

  3. Place the salsify on a serving dish and sprinkle a few drops of vinegar on each piece.

  4. Pour the Cream Sauce over the salsify.

  5. Alternatively, make a White Sauce (see separate recipe) and add a little vinegar.

  6. Lay the salsify in the White Sauce, set over boiling water, and stew for 10 to 15 minutes.

  7. Serve and sprinkle finely chopped parsley on top.
