Omelette Au Pain

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Beat the egg whites and yolks separately.

  2. Combine the yolks with milk, salt, pepper, and bread crumbs. Mix well.

  3. Gently fold in the beaten egg whites until thoroughly combined.

  4. Melt the butter in a smooth frying pan over medium heat.

  5. Pour the egg mixture into the hot pan.

  6. After 1-2 minutes, loosen the edges with a knife.

  7. When slightly firm, place the pan in a 350°F (175°C) oven for 1 minute to set the center.

  8. Be careful not to let it harden.

  9. Fold the omelet in half or thirds and serve immediately.
