Coffee &Clairs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a saucepan, melt the butter with 6 tablespoons of boiling water.

  2. Once boiling, add the flour and stir with a wooden spoon for 3 minutes until stiff.

  3. Remove from heat and add eggs one at a time, stirring thoroughly after each addition.

  4. Grease an éclair pan and fill it with the mixture.

  5. Bake in a 400°F (200°C) oven for about 15 minutes, watching carefully to prevent scorching.

  6. When done, make an incision in each éclair and fill with sweetened whipped cream flavored with coffee.

  7. For icing, combine sugar and ⅓ cup strong coffee in a saucepan and boil until it forms a thread when dropped from a spoon.

  8. Remove from heat and stir until it thickens slightly, then coat each éclair with the icing.
