Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Egg Icing

Ingredients

Directions

Make the icing

  1. Beat the egg whites until frothy, not stiff.

  2. Gradually add the sugar while continuing to beat.

  3. Flavor to taste with your choice of flavoring, adding very little liquid.

Finish the cake

  1. When the icing is stiff enough, dip a knife in cold water and smooth it over the cake.

What each ingredient does

Egg whites
Whip into a foam that gives the icing its structure and light body.
Sugar
Sweetens the icing and, as it dissolves into the whites, stiffens it for spreading.

The step that matters

Adding the sugar gradually while beating. Sugar added all at once can deflate the foam and make the icing grainy or runny. Adding it slowly lets the sugar dissolve into the whites, building a smooth, stable icing that holds its shape.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, orange, vanilla):

  1. Figfits better
  2. Blueberryfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, egg, orange, vanilla. Candidates are from the same food group and used in at least 100 recipes.
