Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten whites add lift and a light, airy texture to the pudding.
Stale bread crumbs
Form the body of the pudding and absorb moisture from the apples and eggs.
Tart apples
Provide moisture, tartness, and flavor that balances the richness of the eggs.

The step that matters

Gently fold in the beaten egg whites. Egg whites hold air from beating; stirring them vigorously knocks that air out, leaving a dense pudding instead of a light one.
