Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Egg white and shell
Binds fine particles and clarifies the liquid when it is passed through the jelly bag.
Lemon juice
Provides the sharp, acidic flavour that balances the sugar.
Sugar
Adds sweetness and contributes to the jelly's body and set.

The step that matters

Passing the mixture through a jelly bag until clear. Skimming and straining remove the coagulated egg white and solids. Rushing this leaves the jelly cloudy and less attractive, though it still sets.
