Peach Fritters

Ingredients

Directions

  1. Peel, stone, and halve the peaches.

  2. Sprinkle peaches with grated lemon peel and sugar, then add the brandy or rum.

  3. Cover and let the mixture sit for 2 to 3 hours, then drain the peaches.

  4. Make a batter for fruit fritters using the liquor from the peaches.

  5. Just before frying, fold in the beaten egg whites until the batter is thick enough to coat the fruit.

  6. Heat lard in a saucepan until boiling.

  7. Dip each peach piece into the batter and drop into the hot lard.

  8. Fry until golden brown, then remove with a skimmer and place on brown paper to drain.

  9. Sift powdered sugar over the fritters and serve in a pyramid on cut paper.
