What each ingredient does

Grape juice
Provides the liquid base, along with natural fruit acid and pectin that help the jelly set.
Sugar
Adds sweetness and helps the juice set into a firm gel while preserving the jelly.

The step that matters

Dissolving the sugar fully. Sugar must dissolve completely into the hot juice. Undissolved crystals can make the jelly grainy and can disturb an even set, since sugar, acid and pectin need to combine evenly to gel.
