Why it works: Allspice and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Onions

Ingredients

Directions

Prepare

  1. Remove the first skin of the onions with your fingers and the second skin with a silver knife.

  2. Pack the onions into well-washed and dried bottles or jars.

Pickle

  1. Pour enough cold vinegar over the onions to cover them completely, seasoned with the allspice and black pepper. Ensure the vinegar fully covers the onions.

  2. Cover and seal the jars tightly to exclude air.

  3. Let the onions sit for two weeks before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small white ripe dry onions
Provide the main vegetable that becomes tender and mellow as it steeps in the vinegar.
Cold vinegar
Acidifies and preserves the onions, giving them their sharp, tangy flavour.
Whole allspice
Adds warm, aromatic spice notes that infuse into the vinegar and onions.
Whole black pepper
Contributes mild heat and aromatic sharpness to the pickling liquid.

The step that matters

Keep the onions fully submerged in vinegar. Onions exposed to air can spoil and mould, while full coverage by acidic vinegar inhibits microbial growth and keeps the pickle safe and crisp.

Swap the onion

How well each one fits the dish's main ingredients (allspice, pepper, vinegar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits better
  4. Onionthe original

Fit is the average pairing score against allspice, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
