Why it works: Turnip and cauliflower match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 286 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Jellied Macédoine of Vegetables
Ingredients
Directions
Take equal quantities of cold boiled string beans, peas, potatoes, beets, carrots, turnips, and cauliflower, cutting the root vegetables into tiny balls.
Mix the vegetables evenly and place them into a border mold rinsed in cold water.
Gradually fill the mold with melted well-flavored clear meat jelly.
Set the mold on ice until firm.
Serve with Tartare Sauce made with the egg in the center.
