What each ingredient does

Lobster coral
Provides the main flavour and a rich, smooth body to the salad.
Hard boiled eggs
Form the creamy base of the dressing and add body.
Raw egg yolks
Emulsify the oil and vinegar into a thick, smooth dressing.
Salad oil
Adds fat and richness, carrying flavour and giving the dressing silkiness.
Vinegar
Adds acidity that brightens the rich coral and egg flavours.
English mustard
Adds sharp pungency and helps stabilise the emulsion.

The step that matters

Adding the raw egg yolks to the egg mixture. Raw yolks are the emulsifier that holds oil and vinegar together. If the oil is not incorporated gradually and the mixture is not well mixed, the dressing can separate or look greasy rather than smooth and thick.

Swap the lettuce
