What each ingredient does

Coffee beans
Provide the main flavor and aroma, which toasting deepens into rich browned notes.
Egg white or crushed eggshells
Clarify the coffee by binding fine grounds so they can be removed and the liquid runs clear.

The step that matters

Boil for 10 minutes, then add cold water and let it settle. The egg white proteins must set during the boil so they can trap fine grounds. The cold water helps the grounds sink, leaving a clearer coffee to pour off.
