Grated Potato Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs with the sugar and melted butter.

  3. Season the mixture with nutmeg, allspice, and salt.

  4. Stir in the grated sweet potatoes until well mixed.

  5. Pour the mixture into a pastry crust.

  6. Cut slits in the crust, about 2 inches wide, and fold them to form a half square.
