Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and starchy body that the pudding sets around.
Butter
Adds fat for richness and a tender, moist crumb.
Sugar
Adds sweetness and helps browning on the baked surface.
Eggs
Bind the mixture and set it into a firm, sliceable custard-like texture.

The step that matters

Bake until set. Eggs set as their proteins coagulate with heat. Pulling the pudding too early leaves it loose in the centre, while overbaking can make it dry and rubbery.

Swap the mace

How well each one fits the dish's main ingredients (potato, butter, sugar, egg, lemon, orange, clove):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against potato, butter, sugar, egg, lemon, orange, clove. Candidates are from the same food group and used in at least 100 recipes.
