Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak the tapioca in the milk for a few hours.

  2. Heat the mixture over medium heat until it comes to a boil.

Make the pudding

  1. Add the grated lemon rind, sweet cream, sugar, and egg yolks; stir well.

  2. Whip the egg whites until stiff and fold them into the mixture just before baking.

  3. Bake in a preheated oven at 400°F (200°C) for 5 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the milk and thickens the pudding as it cooks.
Egg yolks
Enrich the custard and help it set into a creamy texture.
Egg whites
Whipped and folded in, they add lightness and airy structure.
Sugar
Adds sweetness and contributes to the pudding's browning in the oven.
Sweet cream
Adds fat and richness, giving a smoother, softer texture.

The step that matters

Folding in the whipped egg whites. Whites must be whipped until stiff and folded in gently just before baking. Overmixing deflates the foam, so the pudding loses its lift and airy texture.
