The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Provides the gel structure that lets the liquid set firm as it cools.
Oranges
Supply the main flavour and most of the liquid body of the jelly.
Lemon
Adds acidity that sharpens and brightens the orange flavour.
Loaf sugar
Sweetens the jelly and balances the citrus tartness.

The step that matters

Let it boil briefly. Prolonged or vigorous boiling can weaken gelatine's gelling power, so the jelly may set softly. Heat also dulls fresh citrus aroma. A brief boil is enough to combine the ingredients and then strain promptly.
