Directions

Prepare the peaches

  1. Peel the peaches and weigh them.

  2. For every pound of peaches, use ½ pound of sugar.

Cook the peaches

  1. Combine the sugar and water in a preserving kettle and boil for 15 minutes, removing any scum.

  2. Drop in 12 peaches at a time and cook until a straw can easily pass through them.

  3. Carefully remove the peaches with a skimmer and let them cool on flat dishes.

Pack and finish

  1. Once cold, place the peaches in a jar.

  2. Cook the syrup until thick, then let it cool.

  3. Mix equal parts syrup and brandy, and pour over the peaches, ensuring they are well covered.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit, which softens and becomes tender as it cooks in the syrup.
White sugar
Sweetens the fruit and, as a thick syrup, preserves it and adds body.
Brandy
Adds aroma and flavour and helps preserve the peaches in the syrup.

The step that matters

Cook the peaches until a straw passes through. Cooking must be stopped at the right point so the peaches become tender without breaking apart. Lifting them out gently with a skimmer keeps them whole.

Swap the peach

How well each one fits the dish's main ingredients (sugar, apple brandy):

  1. Applefits better
  2. Vanillafits better
  3. Peachthe original
  4. Quincefits less well

Fit is the average pairing score against sugar, apple brandy. Candidates are from the same food group and used in at least 100 recipes.
