Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk as it cooks, giving the porridge body.
Milk
Forms the liquid base that the flour thickens into a creamy porridge.

The step that matters

Stir in the flour mixture. Flour mixed with cold liquid first stops it clumping. Stirring it into boiling milk and boiling it for a few minutes lets the starch swell and thicken evenly, without lumps.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, milk, sugar):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Nutmegthe original
  4. Turmericfits less well

Fit is the average pairing score against flour, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
