Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Grease a tin plate with butter.

  3. Cover the bottom with puff pastry.

Assemble and bake

  1. Place 5 to 6 oysters on the pastry, butter them, and season with salt and pepper.

  2. Beat the egg and spread it over the oysters.

  3. Cover with another layer of puff pastry, making small openings with a fork.

  4. Bake for 15 to 20 minutes, or until the top is nicely browned.

What each ingredient does

Puff pastry
Forms the flaky crust that encloses the oysters and bakes crisp and golden.
Oysters
Provide the main filling, with their briny flavour concentrated by heat.
Egg
Beaten and spread over the oysters, it sets during baking and helps the top brown.
Butter
Greases the tin and enriches the oysters, adding richness and aiding browning.

The step that matters

Making small openings in the top pastry. The fork holes let steam escape while baking. Without them, trapped steam can lift or distort the pastry and leave the filling soggy.
