Directions

Prepare the clams

  1. Wash the clams thoroughly.

  2. Place the clams in a large iron pot with ½ cup of hot water and heat over the fire.

Make the stew

  1. Put the clams into a stew pan with the broth from the pot and boil slowly until tender.

  2. Season the stew with white pepper.

  3. Thicken the gravy by stirring flour into melted butter and adding it to the stew.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Are the main ingredient, cooked gently until tender in their own broth.
Flour
Thickens the gravy by swelling in the liquid as it heats.
Butter
Enriches the gravy and adds fat and a rich flavour when melted with the flour.
Milk
Forms a creamy base for the alternative version of the stew.

The step that matters

Cutting off the hard fringe after the shells open. Clams are opened by steam heat only partly, so the shells open unevenly and the tough fringe must be trimmed before cooking. Leaving it in makes the stew chewy and gritty.

Swap the white pepper

How well each one fits the dish's main ingredients (clam, flour, butter, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Jalapenofits better
  4. White pepperthe original

Fit is the average pairing score against clam, flour, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
