Duck Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Remove all the meat from the cold roast ducks.
Place the bones and stuffing in a pot with cold water and cover.
Bring to a boil to make stock.
Put the duck meat in a deep dish and pour enough stock over it to moisten.
Cover with pastry, making a slit in the center with a knife.
Bake in a 400°F (200°C) oven until light brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
