  3. Dissolve the baking soda in the milk and add it to the mixture.

  5. Fold in the beaten egg whites last.

  6. Beat the mixture hard for several minutes.

Rise and bake

  1. Pour into buttered pans and let it rise for 30 minutes.

  2. Bake in a moderate oven at 350°F (175°C) until done.

What each ingredient does

Raised dough
Forms the base of the bread and gives it its yeasted structure.
Butter
Adds richness and a tender crumb when creamed with sugar.
Sugar
Sweetens the bread and helps it brown in the oven.
Eggs
Add structure and moisture and help bind the batter.
Baking soda
Releases gas that helps the batter rise and lighten.
Raisins
Add sweetness and moist pockets of fruit throughout the loaf.

The step that matters

Fold in the beaten egg whites last. Beaten egg whites hold air that helps lighten the batter. Folding gently keeps that air in, while vigorous stirring deflates it and makes the bread denser.
