Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Apple Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Pare, core, and quarter the apples.

  2. Stew the apples with the grated lemon peel in a small amount of water until tender.

  3. Mash the stewed apples until smooth; you should have 1½ pints of stewed apple.

Make the custard

  1. Mix the sugar with the mashed apples and let cool.

  2. Beat the eggs lightly and gradually stir them into the milk, alternating with the stewed apple.

  3. Pour the mixture into cups or a deep dish and bake at 350°F (175°C) for about 20 minutes.

Serve

  1. Serve cold, garnished with grated nutmeg.

What each ingredient does

Eggs
Beaten eggs set the custard as it bakes, giving it a soft, tender structure.
Apples
Stewed and mashed apples supply the main body, flavour and moisture of the custard.
Milk
Milk adds richness and moisture, and its proteins help the custard set softly.
Sugar
Sugar sweetens the custard and balances the tartness of the apples.

The step that matters

Alternating eggs and apple into the milk. Adding the beaten eggs gradually, alternating with the stewed apple, helps blend the mixture evenly so it sets smooth rather than curdled or lumpy.
