What each ingredient does

Tart apples
Provide the main fruit pulp that forms the body of the trifle.
Sugar
Sweetens the stewed fruit and balances the tartness of the apples.
Whipped cream
Adds a light, creamy layer that contrasts with the smooth fruit pulp.

The step that matters

Pressing the cooked fruit through a sieve. Pressing the stewed apples through a sieve removes skins, seeds and fibrous lumps, leaving a smooth purée. Cooling the mixture fully before topping keeps the cream from melting and loosening.
