Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid mixture into a soft, wobbly structure as it cools.
Cream
Adds richness and a smooth, velvety texture to the set mixture.
Sugar
Sweetens the dessert and balances the sharpness of the lemon and sherry.
Lemon juice
Adds acidity that brightens the flavour and cuts through the richness of the cream.

The step that matters

Beat in the cream before the mixture sets. Gelatine begins to firm as it cools, so the cream must be folded in while the mixture is still fluid. Otherwise it stays in lumps and the velvety texture fails.

Swap the lemon
