What each ingredient does

Tapioca
Swells as it absorbs liquid, thickening the mixture and giving the pudding its soft, chewy body.
Apples
Hold their shape while baking and add tartness that balances the sweet custard.
Milk
Adds creaminess and richness, softening the tapioca into a smooth pudding.
Butter
Adds fat for richness and a smoother mouthfeel.
Sugar
Adds sweetness and balances the tartness of the apples.

The step that matters

Soaking the tapioca until warm but not cooked. Tapioca pearls absorb water and swell as they hydrate. Soaking them fully before baking lets them soften and thicken evenly in the oven. If they are cooked too early, they can turn gummy or break down, and if they are not hydrated enough, they stay hard and grainy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, nutmeg, lemon, butter, milk):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against sugar, nutmeg, lemon, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
