Royal Sago Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Wash the sago and place it in a saucepan with the milk.

  2. Let it stand in boiling water until the sago swells.

  3. While hot, stir in the butter, sugar, and flavoring.

  4. Once the mixture has cooled, add the beaten egg yolks.

  5. Pour the mixture into a buttered pudding dish.

Bake and top

  1. Bake at 350°F (175°C) for 30 to 45 minutes.

  2. Remove from the oven.

  3. Let the pudding cool.

  4. Beat the egg whites with the powdered sugar until frothy.

  5. Spread jam over the pudding.

  6. Top the pudding with the frosting.

  7. Return the pudding to the oven for 2 minutes to brown slightly.

What each ingredient does

Sago
Swells in hot milk to thicken and give the pudding its body.
Egg yolks
Enrich the custard and help it set as it bakes.
Egg whites
Whipped into the topping to create a light, airy foam.
Butter
Adds richness and a tender, smooth mouthfeel.
Milk
Cooks with the sago to form the creamy base of the pudding.

The step that matters

Adding the egg yolks after cooling. If the mixture is still hot when the yolks go in, they can scramble instead of blending smoothly. Letting it cool first keeps the custard silky and helps it set evenly in the oven.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, butter, sugar, egg):
