Florida Orange Jelly

Ingredients

Directions

Prepare

  1. Grate the yellow rind of the oranges and lemons.

  2. Squeeze the juice of 4 Mardi oranges into a porcelain-lined preserving kettle, removing all seeds.

  2. Dissolve the gelatin in warm water over low heat, stirring until fully dissolved.

  3. Add the syrup to the dissolved gelatin.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Sweetens the jelly and balances the acidity of the citrus juice.
Oranges
Provide the main juice and flavour of the jelly.
Lemons
Add aromatic citrus oil from the rind and extra acidity.

The step that matters

Dissolve the gelatin fully over low heat. Gelatine that is boiled or left undissolved can lose its setting power or leave grainy lumps, so the jelly may not firm evenly. Gentle heat and stirring until clear ensure it dissolves completely before the syrup is added.
