Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Provide structure and lift, helping the dumplings hold their shape while cooking.
Flour
Forms the starchy base that thickens with heat and gives the dumplings body.
Butter
Adds fat for richer flavour and a tender texture.
Water or milk
Supplies the liquid that hydrates the flour into a workable mixture.

The step that matters

Bring to a boil until the mixture pulls away from the sides. Cooking the flour paste until it pulls away drives off excess moisture and gelatinises the starch, so the dumplings set firmly instead of dissolving or turning gummy in the soup.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, milk, flour, butter):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, milk, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
