  3. Return the potatoes to the stove and cover for about 5 minutes.

  4. Mash the potatoes until smooth and free of lumps.

Cook the onion

  1. In a skillet, heat the goose fat and finely chop the onion.

  2. Cook the onion until light brown.

Fry the puffs

  1. Dip a tablespoon in the hot fat, scoop a spoonful of potato dough, and place it in the skillet.

  2. Repeat until all the dough is used, dipping the spoon in fat each time.

  3. Let the puffs brown slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that mashes into the dough and gives the puffs their body.
All-purpose flour
Adds starch and structure so the potato dough holds its shape in the hot fat.
Goose fat
Carries heat into the dough and promotes browning and a rich flavour on the outside.
Onion
Adds savoury sweetness and aroma once cooked until light brown.

The step that matters

Dipping the spoon in hot fat before each scoop. A hot, oiled spoon keeps sticky potato dough from clinging to it, so each puff releases cleanly into the hot fat and holds its shape while browning.

Swap the onion

How well each one fits the dish's main ingredients (potato, flour):

  1. Chivefits better
