Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dough, giving the puffs their soft, fluffy interior.
Flour
Absorbs moisture from the mashed potato, helping the puffs hold their shape while frying.
Goose fat or butter
Conducts heat for frying and browns the outside of the puffs to a golden crust.
Onion
Adds savory flavor that sweetens and deepens as it browns in the fat.

The step that matters

Mash the potatoes until smooth and well salted. Lumps and unevenly mixed flour leave dense or crumbly spots, and salt must be evenly distributed because it seasons the dough throughout rather than just its surface.

Swap the onion

How well each one fits the dish's main ingredients (potato, flour, butter):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against potato, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
