What each ingredient does

Sweet butter
Creams with the sugar to give the pudding a rich, tender body.
Egg yolks
Add richness and emulsify the batter, helping it set smoothly.
Egg whites
Whipped to stiff peaks, they lighten the batter and help it rise.
All-purpose flour
Provides structure so the pudding holds its shape when set.
Powdered sugar
Sweetens the batter and dissolves easily into the creamed butter.
Raisins
Add chewy pockets of sweetness throughout the pudding.

The step that matters

Gradually add the egg whites. Stiffly beaten whites hold air that lightens the batter. Folding them in gently, rather than stirring, keeps that air from collapsing, so the pudding stays light.
