What each ingredient does

Egg
Thickens the apple filling as it cooks, giving it body and structure.
Sugar
Sweetens the syrup and filling, and helps preserve the cake layers.
Arrack
Adds aroma and flavor to the sponge or almond layers.
Rum
Adds aroma and flavor and moistens the crumb-and-syrup layer.
Tart apple
Adds acidity and moisture to the filling, balancing the sweetness.

The step that matters

Boiling the apple filling while stirring. Boiling the egg and grated apple mixture while stirring keeps the egg from scrambling and lets the filling thicken evenly into a spreadable layer.
