Why it works: Biscuit and pistachio share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 53 recipes. Both carry nonanal, which smells fat, citrus. The science ↓

Marbled Biscuit Tart

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

  1. Make a biscuit batter like that for Biscuit Tart Cake.

  2. Divide the batter into five equal parts.

  3. Color one part with cochineal, another with chocolate, and mix a third part with finely pounded pistachio nuts.

  4. Leave the remaining two parts uncolored.

  5. Butter a high cake form well.

  6. Pour in part of the uncolored batter, then add the chocolate batter, followed by the pistachio batter, more uncolored batter, and finally the pink batter.

  7. Bake in a slow oven (300°F / 150°C).

  8. Frost with pink icing.
