What each ingredient does

Cream
Provides fat and richness, giving the ice cream a smooth, creamy body.
Powdered sugar
Sweetens the base and lowers the freezing point, keeping the ice cream soft and scoopable.
Egg yolks
Add emulsifying fats and proteins that help the custard base freeze smooth and rich.
Crystallized fruit
Adds chewy pieces of fruit and sweetness, with flavor carried through the base.
Pale sherry
Adds aroma and flavor, and a little alcohol that keeps the frozen texture softer.

The step that matters

Adding the fruit when the mixture is half frozen. Adding the chopped fruit and liquids too early or too late changes the texture. Half-frozen mixture can take them in evenly without sinking or freezing them into a hard mass. Alcohol and sugar also slow freezing, so the timing shapes how soft the final ice cream is.
