Strawberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks and whites of the eggs with sugar, salt, and lemon peel until thick.

  3. Fold in the matzo flour gently.

Bake and fill

  1. Divide the batter into two layers and bake until golden.

  2. Prepare strawberries by halving and sprinkling with sugar.

  3. Once the cakes are cool, fill each layer with strawberries.

Top and serve

  1. Whip the heavy cream, sweeten, and spread on top of the cakes.

  2. If using meringue, beat the egg whites with sugar and spread over the cakes instead.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped into the batter, they trap air and give the sponge its light, airy structure.
Sugar
Sweetens the cake and helps the whipped eggs hold their foam while baking.
Matzo flour
Provides the light flour base that sets the cake's structure without leavening.
Heavy cream
Whipped into a rich, soft topping that adds fat and moisture to the cake.

The step that matters

Fold in the matzo flour gently. Folding keeps the air trapped in the whipped eggs. Stirring or beating hard would deflate the batter and produce a dense, flat cake.
