Cream of Cauliflowers

Ingredients

Directions

Prepare the cauliflower

  1. Trim the outer leaves from the cauliflower and wash it in cold water.

  2. Soak the cauliflower in a large pan of cold water with a handful of salt to remove insects.

  3. Boil the cauliflower in salted boiling water for 20 minutes until the stalk is tender.

  4. Drain the cauliflower and cut it into even-sized branches, reserving the finest ones in cold salted water.

  5. Mash the small pieces and stalk in a colander to make about 1 cup of puree.

Make the soup

  1. In a thick saucepan, melt the butter and flour over heat until bubbling.

  2. Gradually stir in the boiling water and hot milk, stirring constantly for smoothness.

  3. Season the soup with salt, white pepper, and nutmeg.

  4. Mix in the cauliflower puree and let it boil once before serving.

  5. If not serving immediately, keep the soup warm in a bain-marie.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the body of the soup and, pureed, gives it a thick, smooth texture.
Butter
Fat that combines with flour to make a roux, enriching flavour and body.
Flour
Starch that thickens the milk and water into a smooth, creamy base.
Milk
Adds creaminess, richness and a mild sweetness to the soup.

The step that matters

Stirring in the liquids. Adding boiling water and hot milk to the roux while stirring constantly keeps the starch dispersed, so the soup stays smooth rather than lumpy.
