Ingredients

Directions

Prepare the base

  1. Fry the onions in sweet drippings or butter until brown.

  2. Add the ham and veal to the onions and fry until browned.

  3. Slice the okra pods, discarding the stems, and add them to the pot.

  4. Pour in 4 quarts of boiling water, add the chopped pepper, and season with salt.

  5. Cover and simmer the soup slowly for 2 hours.

Add the crab and tomatoes

  1. Fry the crab meat with a sliced onion and 1 tablespoon of butter until brown.

  2. Add the fried crab meat and sliced tomatoes to the soup after 2 hours.

  3. Simmer the soup for an additional 2 hours, keeping it covered.

  4. If the soup reduces, add boiling water to maintain 4 quarts.

Finish and serve

  1. Remove bones and any unshredded meat, check seasoning, and serve hot.

What each ingredient does

Veal
Gives the soup body and rich meaty flavor as it simmers slowly for hours.
Okra
Releases starch during long simmering, thickening the soup and giving it body.
Tomatoes
Add acidity and sweetness, building a fuller flavor as they cook into the broth.
Crab meat
Contributes sweet, savory seafood flavor and aroma to the finished soup.
Onions
Browning in fat builds sweetness and deep savory flavor at the start.
Ham
Browned with the veal, it adds smoky, savory depth to the broth.

The step that matters

Frying the onions until brown. Browning the onions in fat caramelizes their sugars and builds the savory base of the soup; pale onions yield a flatter, less flavorful broth.
