Darne of Salmon

Ingredients

Directions

  1. Wrap the thick slice of salmon in a cloth or place it on the drainer of a fish kettle.

  2. Boil the salmon until cooked through.

  3. Serve hot with a garnish of parsley and your choice of sauce.

  4. Alternatively, cool the salmon and cover it with meat jelly or a thick cold sauce like mayonnaise.

  5. For decoration, use a contrasting sauce and lay figures made from lobster-coral mixed with mayonnaise on top.

  6. You can also decorate with small cubes cut from aspic jelly.

  7. If shellfish is out of season, use a bunch of fine parsley or watercress instead.
