Trout with Cream Gravy

Ingredients

Directions

Prepare and fry the trout

  1. Roll the cleaned trout in Indian meal seasoned with salt and pepper.

  2. Heat enough fat in a frying pan to cover the bottom to a depth of ½ inch until smoking hot.

  3. Fry the trout in the hot fat until browned all over, then transfer to a hot dish to keep warm.

Make the cream gravy

  1. Pour out most of the fat from the frying pan, then add 1 cup of milk.

  2. Stir the milk until it boils, adding more if the gravy is too thick.

  3. Let the gravy boil for 1 minute, then season with salt and white pepper.

Serve

  1. Pour the gravy into a gravy boat and serve with the fried trout.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Trout
Forms the main body of the dish and browns in the hot fat, giving a savoury crust.
Indian meal
Coats the fish so it browns and forms a crisp outer layer when fried.
Milk
Forms the base of the gravy, giving it a creamy body as it thickens on boiling.

The step that matters

Frying the trout in hot fat. The fat must be smoking hot before the fish goes in. Hot fat sears the coating quickly, creating a crisp browned crust and keeping the fish from absorbing excess grease.
