How to Boil Terrapin
Ingredients
Directions
Prepare
Wash the terrapin by placing them in a tub or large pan filled with clean cold water for 30 minutes.
Bring a large pot of water to a boil.
Plunge the terrapin into the boiling water head first, holding them from the back to avoid bites.
Boil the terrapin for 5 to 10 minutes until the skin on the claws or legs can be rubbed off with a wet cloth.
Remove the outer skin.
Cook
Place the terrapin back in sufficient boiling water to cover them.
Add 1 teaspoon of salt for each quart of water.
Boil gently until the shells begin to separate.
Check for tenderness; this may take 15 to 30 minutes.
Remove the terrapin from the boiling water.
Cool
Let them cool until you can dress them.

What each ingredient does
- Live terrapin
- Is the main protein; its meat becomes tender through extended simmering in water.
- Salt
- Seasons the cooking water so the terrapin meat is lightly flavored as it cooks.
The step that matters
Plunging the terrapin into boiling water. Starting in boiling water sets the outer skin quickly so it can be rubbed off cleanly, while gentle simmering afterward keeps the meat tender rather than tough.
